Happy Halloween

BOO!



Welcome Ghost, Goblins and Ghouls.

Halloween madness is almost upon us. If you're like me you'll get out of the graveyard before the candy eaters come knocking on your coffin with their germ-infested hands looking for treats that stick to their teeth.  But, first you'll need to satisfy your ghoulish hunger with a wickedly tasty Butternut squash soup. Like a mad Dr. Frankenstein, instead of robbing graves for body parts to make the perfect man, I robbed the best parts of Bobby Flay's Sweet Potato-Coconut soup and Dorie Greenspan's Butternut Squash Soup (Parade Magazine) and combined them to create the perfect cauldron of soup. I've topped it with diced caramelized Italian pancetta and butternut squash and minced chives with swirls and dots of heavy cream. The unsweetened coconut milk adds a rich, velvety texture to the chicken stock and apple juice base.   Don't be afraid to play Dr. Frankenstein in the kitchen and dismember and rearrange recipes to create a better monster. Try experimenting this Halloween. You'll need a full stomach to run from the vampires and zombies.
